A great grilled cheese sandwich for me will always be plain white bread, lots a butter on outside with two simple slices of american processed cheese. Sometimes I add a couple thin slices of ham. I like the video, might even try it someday but not likely soon.

Suggestion: instead of the grill spatula thingy, maybe try an $.80 aluminum tin like you might take to a potluck, and a pair of normal kitchen tongs or even a spatula to move it around? You might line the bottom with an extra layer of foil if you're worried it's too thin but not everyone has two big grill spatulas and it can make for easier cleanup. If you use foil you could even reuse your cheapo pans.
Honestly I just use a frying pan for "grilled" cheese anyway so it wouldn't be too hard to brown the cheese separately if I wanted...
