This is the BEST Mac & Cheese recipe you will ever make, and you can change it up a bit easy just by changing pasta or the kind of shredded cheese you add. Watch what happens at the end if you leave it unattended! Here's the recipe: 4 to 4-1/2 cups Macaroni or other noodles 1 stick butter 1/2 cup All Pupose Flour 1 heaping tsp Paprika 3 cups milk (Might take a bit more) 16oz package velveeta cheese cubed 1/2 cup grated Cheddar or other cheese 4 slices American Cheese Salt and pepper to taste Topping (optional for baked version) 3 tbs butter 1 cup panko bread crumbs 1 cup grated cheddar or other cheese To make topping: Melt butter and toss in bread crumbs. Keep cheese sparate. Preheat oven to 350°. Cook Macaroni noodles until andante drain in colander well. In the same pot as the noodle were in to melt the butter, Whisk in the flour and Paprika to make a paste (Rou). Gradually whisk in the milk. Bring to a simmer over medium heat, whisking until thickened, about 1 minute. Add the Velveeta and other cheeses, salt and pepper. Whisk until smooth. Stir the cooked noodles into the cheese sauce. Scrape into A Big Casserole dish. Sprinkle the cheddar cheese on the top then the bread crumb topping. Bake UNCOVERED until bubbly and lightly golden on top, 20-25 minutes. Let stand 10 minutes before serving. This is a BIG batch!
