Mac & Cheese - BEST EVER !

This is the BEST Mac & Cheese recipe you will ever make, and you can change it up a bit easy just by changing pasta or the kind of shredded cheese you add. Watch what happens at the end if you leave it unattended! Here's the recipe: 4 to 4-1/2 cups Macaroni or other noodles 1 stick butter 1/2 cup All Pupose Flour 1 heaping tsp Paprika 3 cups milk (Might take a bit more) 16oz package velveeta cheese cubed 1/2 cup grated Cheddar or other cheese 4 slices American Cheese Salt and pepper to taste Topping (optional for baked version) 3 tbs butter 1 cup panko bread crumbs 1 cup grated cheddar or other cheese To make topping: Melt butter and toss in bread crumbs. Keep cheese sparate. Preheat oven to 350°. Cook Macaroni noodles until andante drain in colander well. In the same pot as the noodle were in to melt the butter, Whisk in the flour and Paprika to make a paste (Rou). Gradually whisk in the milk. Bring to a simmer over medium heat, whisking until thickened, about 1 minute. Add the Velveeta and other cheeses, salt and pepper. Whisk until smooth. Stir the cooked noodles into the cheese sauce. Scrape into A Big Casserole dish. Sprinkle the cheddar cheese on the top then the bread crumb topping. Bake UNCOVERED until bubbly and lightly golden on top, 20-25 minutes. Let stand 10 minutes before serving. This is a BIG batch!

10. velveeta is absolutely disgusting. It used to be ok like 20 years ago but over the years they've changed it and it's just gross now. Not sure why anyone would choose to eat it.

19. So I have tried a few times to make Mac and cheese but they seem gritty or the cheese seems to separate. I don't know what I am doing wrong. It can't be that difficult. I make gravy all the time.
